Cut the washed, dried meat into finger-thick slices across the grain and beat it well.
Mix the flour, pepper and salt together; turn the pieces of meat in this; do not stack the pieces on top of one another once they have been floured.
Brown the margarine, and brown the pieces of meat in it a few at a time. Clean the onion, cut it into thin slices across, and brown it last.
Pour on enough boiling water to cover the meat; then let it simmer under a lid for 1 to 1½ hours.
NB. Meat from the shoulder or less tender pieces of the leg are used for this dish.
NB. The bones from the meat are boiled out in the hay box. (See page 58.)
