The peas should soak in cold water for 1 day and night.
Melt the butter — preferably in an enamelled pot — add the soaked peas, the finely cut onion and leek, stir well, and after 10 minutes add the stock; let it sweat gently for 5–6 hours; put the pot in the hay box once it has boiled for 20 minutes on the stove.
The soup is now pressed through a colander, returned to the pot, and brought to a boil.
Stir the egg yolks with a little pepper and salt, add the cream, and strain this into the soup while whisking vigorously after the soup has been taken off the heat.
The whole-boiled or tinned peas are served in the soup; these may be omitted and toasted bread served instead.
