Clean the celeriac roots, cut them into slices, and put them over the heat with the boiling water, sugar, salt, the finely cut leek, the cleaned and finely cut onion, and the parsley and celery greens tied together in a bundle.
Boil until the celeriac roots are completely cooked through.
Press the soup through a purée press, thinning it — if necessary — with more boiling water.
Return the soup to the heat, bring it to a boil, take it off the heat, and thicken it with the egg yolks and the cold butter.
Once the thickening has been added to the soup, it must not boil. Season the soup with salt to taste, and serve in it a celeriac root that has been boiled and cut with a root knife.
N.B. The whole celeriac root may of course be boiled in the soup pot, taking care to lift it out as soon as it is tender.
