Put the cleaned peas and finely cut roots together with the bunch of soup herbs on the heat with the water and half the butter, boil until everything is tender, press through a colander; set aside some peas to serve in the soup.
Bring the soup to the boil again, whisk in the rest of the butter and the flour, which have been kneaded together, and boil for 10 min.
Add salt and sugar to taste and finely chopped parsley.
The pea pods (about 200 pods) are cut open and boiled in 2 l water; must boil for 0.75 hour; strain and thicken with a roux made of 60 g butter and 40 g wheat flour; boil for 0.25 hour. Serve the cooked, cut-up roots or peas in the soup, adding salt, pepper and finely chopped parsley.
