Remove the outermost leaves and wash the cabbage; cut a deep slit in the stalk, and boil or steam the cabbage tender in boiling, salted water.
Melt the butter, stir in the flour, thin with the cabbage stock, bring to a boil; add the seasonings.
The boiled, cut-up cabbage – from which all the water has been pressed – is brought to a boil in the sauce, which may be enriched with a little cream.
If you do not wish to cream the cabbage, serve it boiled and as dry as possible with melted butter over it and preferably sprinkled with chopped parsley.
