For a 50-litre cask, take the juice of 30 l of berries, sugar and the rest water.
The sugar is dissolved in boiling water, clarified and blended into the juice once it has cooled.
To make gooseberry wine more sparkling, you can add 8 to 10 g of icing sugar to each bottle when the wine is bottled. Champagne bottles should be used, and the cork must be tied down with wire (bottle wire).
