When you have a surplus of gooseberries, you can make use of the ones left over without any further expense.
Cook them with just a little water until the berries fall apart, then strain them through the woollen bag.
Then boil the strained-off juice for 5 minutes, and pour it boiling hot into clean — warm and sulphured bottles.
Cork them and dip the corked bottles in melted wax and resin at once.
The cordial is good for pudding or jelly in winter, or for blending together with blueberry cordial.
