Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Historical gooseberry wine from 1900: yellow or green gooseberries are crushed, steeped for a few hours in water and pressed, the juice is put into a 40-liter cask with sugar and water and fermented like redcurrant wine.

Fra «Kogebog for skole og hjem» (1900) av Henriette Schønberg Erken og Caroline Steen. Stikkelsbær ga en syrlig, frisk vin og var vanlig i norske hager. Her brukes et større 40-liters anker. Oppskriften viser til framgangsmåten for den foregående vinen (ripsvin).
Crush and steep
Crush the gooseberries, pour on a few liters of water and let stand for a few hours. Then wring out the juice.
Fill the cask
Put the juice together with the sugar into the 40-liter cask and top up with water.
Fermentation
Otherwise treat as the redcurrant wine (stir daily under a cloth until fermentation subsides, bung it up and age before bottling).
