Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

A historic 1900 redcurrant wine: redcurrants and white raspberries are pressed, the juice put into a 20-liter cask with cognac, sugar and cold water, fermented cool with daily stirring under a cloth topped with redcurrant stems, bunged and aged until the next autumn before bottling.

Fra «Kogebog for skole og hjem» (1900) av Henriette Schønberg Erken og Caroline Steen. Ripsvin var kanskje den vanligste hjemmelagde vinen i norske hjem, siden rips ga rik avling. Merk den lange lagringstiden – helst et helt år – som ga en klar og velmodnet vin.
Press the berries
Crush the redcurrants and white raspberries and press out the juice.
Fill the cask
First pour the cognac into the cask, then the juice. Add sugar and cold water until it is about a hand's breadth short of the bung hole.
Fermentation
Set the 20-liter cask in a cool place and stir 2 times daily. Lay a thin cloth over the bung hole, covered with redcurrant stems. Stir until it stops bubbling (the fizzing ceases).
Aging and bottling
Bung the cask tightly. The wine should preferably rest until the next autumn, then be drawn off on a clear day into clean bottles, corked and sealed with wax.
Priser fjernet. «kuuses» modernisert til «knuses». Konjakk-mengde beholdt (2,5 dl). Mål ellers beholdt metrisk.
