A historic 1900 orange essence/liqueur: finely cut orange peel is steeped in cognac for 2 months to make an essence; sugar and water are boiled into a syrup, citric acid is added, and 3 dl of the essence is blended into the cold syrup.

Merk at essensen må lages i god tid før resten.
Make the essence in advance
Wash the orange peel, cut away all the white and cut the peel into quite fine strips. Put the strips into bottles and pour over enough cognac to cover them well. Let stand for 2 months. This gives the orange essence.
Boil the sugar syrup
Boil the water and sugar, skim and strain. Once the syrup is cold, add the citric acid dissolved in 0.5 dl of warm water.
Mix
To this cold mixture, add 3 dl of the orange essence.
