Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

A historic 1900 rhubarb wine: rhubarb stalks are cut, crushed and pressed, sugar is dissolved in the juice, everything is filled into a 20-liter cask with water and fermented like redcurrant wine. A raisin or baking soda in the bottle makes the wine sparkling.

Fra «Kogebog for skole og hjem» (1900) av Henriette Schønberg Erken og Caroline Steen. Rabarbra var en av de første og rikeligste hageplantene om våren, og rabarbravin var en billig måte å utnytte avlingen på. Oppskriften henviser til framgangsmåten for ribsvin på samme oppslag.
Cut and press the stalks
Cut the cleaned, washed rhubarb stalks into quite small pieces, crush them and press out the juice.
Mix with sugar
Dissolve the sugar in the juice and pour it all into the cask (20 liters). Fill up with water until 10 cm short of the bung hole.
Fermentation
Otherwise treat it like redcurrant wine (stir daily until the fermentation subsides, then bung it tightly and let the wine rest until it is clear before bottling).
Sparkling (optional)
Put a raisin or a good pinch of sodium bicarbonate in each bottle if you want sparkling wine.
