Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

A historic 1900 recipe for cherry wine: cherries are crushed with water and lemon juice, the stones crushed and mixed with sugar, the mash strained and pressed, the juice cleared for an hour, spirit added and bottled.

Fra «Kogebog for skole og hjem» (1900) av Henriette Schønberg Erken og Caroline Steen. Hjemmelagde bærviner var en fast del av husholdningen rundt 1900, der overskuddet av hagens og markens bær ble konservert som vin til vinteren. Oppskriften bruker et 20-liters anker (trefat) og lang klaring.
Crush the berries
Crush the ripe, juicy cherries in a large vessel or crock. Pour over the water and add the juice of the lemons. Stir well and let stand for 2 hours.
The stones and the sugar
Take out the stones, crush them and mix them with the sugar. Strain the cherry mash through this and press it all through a coarse linen cloth.
Clearing
Stir the juice for 1 hour and strain it until completely clear. Add the spirit.
Bottling
Stir well, draw off into bottles, cork and seal with wax. Store in a cool place.
