Boil the ripe, cleaned gooseberries tender in water, with enough water to reach halfway up the berries.
When the water has boiled down well, press the berries through a press or colander.
Mix the sugar, wine, cinnamon and the pressed berries together, set over the fire and bring to the boiling point while stirring constantly, take from the fire, and when it is cold stir in the whisked egg yolks, the vanilla, and finally the stiffly whisked whites.
— Serve when completely cold.
N.B. If desired, 10 to 15 g of dissolved gelatine may be added to the soufflé. In that case, fill it into a moistened mould; turn it out when it is set and serve with vanilla sauce or gooseberry sauce.
