Blanch the cleaned, unripe gooseberries in boiling water; strain off the water.
Dissolve the sugar in the 1 dl of water, add whole cinnamon, lemon zest and the berries to taste, and let draw over a low heat for half an hour — it should not boil.
Pour up the compote; remove the cinnamon and lemon zest, and when the compote is quite cold, fill it into a tall puff-pastry ring or onto a rolled-out piece of puff pastry, sprinkled with rusk crumbs; lay the compote on top, and place remnants of the puff pastry as a lattice over the cake, together with a border of puff pastry around the cake.
Brush the puff pastry with egg and bake golden brown in a not-too-hot oven.
