Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Gooseberry syrup from Cookbook for School and Home (1900): 2 l red gooseberries are boiled with 7.5 dl water about ¼ hour, strained and left to drain 6–8 hours, the juice weighed and mixed with an equal weight of sugar, boiled quickly for 10 min, cooled and bottled. Turns completely clear, keeps for several years.

En klar bærsirup laget med like deler saft og sukker (1:1 etter vekt), som gir en tykk, holdbar sirup. Nesten modne, røde stikkelsbær gir best farge og smak. Den lange avrenningen på 6-8 timer sikrer en helt klar sirup uten grums.
Boil the berries
Boil the red, almost ripe gooseberries with the water for about a quarter of an hour.
Strain and let drain
Strain through a cloth and let it hang and drain for 6 to 8 hours.
Weigh and add sugar
Weigh the juice and mix with an equal weight of sugar.
Boil quickly
Bring quickly to a boil and boil for 10 minutes. Skim well.
Cool and bottle
Pour out, cool, and fill into clean, dry bottles. Cork and seal with wax. The syrup turns completely clear and can be kept for several years.
