Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Sour cherries from Erken & Steen (1900): 0.5 kg berries layered with 375 g sugar, 1.25 dl vinegar added, cooked gently until the berries shrink, the juice boiled with cloves and cinnamon, the berries stirred back in and filled into jars.

Sure kirsebær med eddik, nellik og kanel var et krydret tilbehør til kjøtt og vilt. Oppskriften er hentet ordrett fra «Kogebog for skole og hjem» (1900) av Henriette Schønberg Erken og Caroline Steen. Eddik og sukker ga holdbarhet. 1900-tallets overbinding gir ikke moderne mattrygghet; bruk rene glass og oppbevar kjølig.
Layer berries and sugar
Clean the cherries and layer them with the sugar in the preserving pan.
Add vinegar and cook
Pour the vinegar over. Set over low heat and cook until the berries begin to shrink or are heated through to the stone.
Boil the juice with spices
Lift out the berries. Boil the juice with a few whole cloves and a small piece of whole cinnamon until it is smooth.
Mix and fill into jars
Return the cherries and mix well with the juice. Put the preserve into jars and tie shut once cold.
