Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Bottled gooseberries from Cookbook for School and Home (1900): cleaned, dried whole gooseberries are filled into wide bottles, corked and waxed, wrapped in hay, boiled ½ hour in a water bath and cooled in the pot. When used, the berries are simply stirred with sugar.

En ren konserveringsmetode uten sukker: hele stikkelsbær varmekonserveres på flaske slik at de kan tas fram senere og bare røres med sukker ved bruk. Høet rundt flaskene og det langsomme avkjølingen i gryta beskytter mot at glasset sprekker.
Clean the berries
Remove the stem and blossom end from the gooseberries, rinse them and dry them well.
Fill into bottles
Fill the berries into wide, dry bottles. Cork and seal (with wax) the bottles, and wrap hay around them.
Heat-treat
Set the bottles in a pot with cold water and boil for half an hour.
Cool in the pot
Let the bottles stand in the pot until they are completely cold.
Use later
When the berries are to be used, it is enough to stir them together with sugar; they need not be cooked.
