Blackcurrant jam from Cookbook for School and Home (1900): 500 g blackcurrants, 375 g sugar, 1.25 dl water. Berries and sugar are layered in water, simmered until the foam disappears, the berries are taken out while the juice is reduced for 10 min, then combined and filled into jars.

Layer up
Put the water in the pan first. Layer the cleaned blackcurrants with the sugar.
Simmer
Let it simmer until no more foam appears.
Lift out the berries
Lift out the berries with a slotted spoon, and let the juice boil down for 10 minutes.
Combine and fill
Return the berries to the pan, shake lightly so they mix with the reduced juice. Fill into jars, and cover the next day (when it is cold).
Bruk rene glass.
