Blanch the cleaned, washed spinach in a very little boiling, salted water. Take up and press out the water.
Chop the spinach fine with the flour. Melt the butter, add the chopped spinach, thin with the spinach water, and if this is not enough, add a little milk; let it simmer gently for 10 minutes.
Arrange on a warm dish; place the hard-boiled eggs, shelled and cut a little off one end, around it, and lay a halved tomato over the eggs.
Chop the cut-off egg white and sprinkle it over the tomatoes.
