Fish such as large cod, redfish, etc., that are to be brine-cured, are cleaned and dried, but not washed, and rubbed with sugar in the belly.
Strew thickly with salt over and under and between each layer of fish. Pack fairly tightly together in a wooden tub; let it lie 2–3 full days.
When the fish is to be used, the salt is rubbed off; the fish is cut into suitable pieces, washed and put on the fire in boiling water.
NB. Boil a small piece as a test the day before the fish is to be eaten; it then shows whether it needs soaking or not. Salt fish is served with mustard sauce.
