The meat is cut and ground with half of the pork 4 times; the rest of the pork is cut into small squares. The pork must have lain 5 hours in salted water.
The meat and the pieces of pork are worked well with 150 g salt, 1 tablespoon saltpeter, 10 g cloves, 10 g pepper and 1 teaspoon nutmeg.
While kneading continuously, add 1 wine glass of cognac and ½ l red wine, in which 200 g sugar has been melted.
The sausages are stuffed very hard, pricked with a darning needle, placed in a trough, sprinkled with a little salt and turned daily for 3 days.
Hung up for a day, cold-smoked for 6—8 hours; stored hanging in a dry, airy place to cure.
