A deep, heaped plateful of mushrooms. Inky-cap was used here, but any kind will do. Blanch the mushrooms and chop them fine.
Cook one large spoon of flour, 1 large spoon of butter and ¼ l. milk into a thick sauce. Add salt and 1 knife-point of mace, and once it has cooled, 3 egg yolks, the mushrooms and the stiffly beaten egg whites.
Pour into a greased dish, sprinkle some crushed rusks over the top, and bake the gratin in the oven for ½–¾ hour.
Serve with white sauce. It is excellent and generally well received. The gratin can also be served in scallop shells.
