Pour the lukewarm milk over the grated bread, add the finely chopped suet, the sugar, the cleaned and washed currants and raisins, the finely cut candied peel, the blanched, finely chopped almonds, the flour, the spices, and lastly the whisked eggs and the cognac.
The batter is placed on a moistened, floured pudding cloth, which is tied firmly around it, put over the heat in a pot of boiling water and boiled for 12 hours — or it may be put in a buttered, breadcrumb-coated mould, tied over with a wetted cloth, and boiled for 12 hours. The water must stand over the mould the whole time.
Turn out, pour cognac, rum or spirits over it, set alight, and serve the pudding flaming.
N.B. The pudding may well be made several weeks before it is to be used, and it is then usually boiled for a couple of hours before it is to be served.
