The celery is washed and scraped well; tied into small bundles, placed in an enamelled pot, covered with cold water; as it comes to a boil, the water is strained off. The celery is put over the heat again with boiling water or thin meat stock and simmers until it is quite tender, about 1 hour.
30 g of butter is melted, the flour stirred in, thinned with the milk little by little, simmered for a couple of minutes, seasoned with pepper and salt to taste; taken off the heat, the egg yolk stirred in.
The water is strained off the celery; the twine is removed, and the celery is placed in a buttered, ovenproof dish; the sauce is strained over, the grated cheese is mixed with the crushed rusk and sprinkled on; the 25 g of butter is divided into small pieces and laid over here and there.
Bake in the oven for about 10 min., or until it turns lightly brown.
