Free the fish of skin and bones, dry it and cut it into small pieces.
Grind twice together with the potatoes and the onion; work in the flour and seasoning.
Form into rather large balls, into which a piece of suet is inserted.
Boil for 20 min. in good fish stock or thin meat stock. Eaten hot with melted fat or butter.
Salt fish balls can also be made from: 2 l raw grated potatoes, 1 deep plate of large saithe, pepper, onion, salt, milk, groat meal and pork. The cleaned, scraped fish is pounded with a mallet in a trough together with the raw grated potatoes — or you can use boiled cold ones — thinned with good milk until the dough is suitably loose, and then groat meal is added until the dough is suitably firm. Work each ball until smooth and stick a cube of pork into each. Boil in water or milk and water.
