Salt herring is soaked for 2–12 hours, the head and tail are cut off, the skin is pulled off, and the small dorsal and side fins are removed.
Cut open along the belly, remove the entrails, and wash the herring well. The milt must be kept and served alongside.
If the backbone is to be removed, this is done by running the knife from the head towards the tail along the bone on both sides. Cut away the side bones as thinly as possible.
The herring is served whole or cut into diagonal pieces; arranged with onion and beetroot. Leftovers of the herring are put down as pickled herring.
