Clean the salmon; do not scale, wash, or open the belly; cut off the head and tail; cut it open along the back and fillet it away from the bone, cutting out the backbone, and rub it with the blood.
Spread it open with flat wooden sticks pushed through the skin from back edge to back edge; let it lie well covered with salt and sugar for 2 to 3 days depending on size, without being washed. It is best placed between two wide boards with a little weight on the top one.
Wipe off the salt with a cloth, and rinse the fish over with 1 teaspoon finely ground saltpetre dissolved in 0.5 dl water.
Smoke for 8 hours in cold juniper smoke; keep it in an airy place. Ready to use after resting for 6 days.
The cut-out bone, head, and tail are boiled; likewise the innards, but in a separate pot.
