Divide the meat into suitable pieces, crack the bones, and rub it with the mixed salt, sugar and saltpetre; let it rest for 1 day.
Boil the brine and skim it.
Place the meat in a wooden tub or stoneware crock and pour the cold brine over it. The brine must stand above the meat. Keep it in a cool place.
Beef can be used after 3–4 weeks, mutton after 1.5–2 weeks, veal after 1–1.5 weeks, side pork and shoulders after 3 weeks, and hams for smoking after 6 weeks.
When the meat and pork are to be used, wash them and put them over the heat in lukewarm water with 1 teaspoon of sugar. Serve with mashed swede or stewed vegetables.
