Slice the soaked liver, remove the membranes and veins, and dry it well.
Cut the pork into strips and toss them in a mixture of pepper and salt.
On each slice of liver place a strip of pork, roll the liver up tightly, and tie it with thread.
Flour the roulade and brown it in fat, thin gradually with the milk and water, and simmer covered for 45 minutes.
Let the sauce reduce until it thickens, or stir 40 g of flour into 4 dl of cold water and whisk it into the stock.
Roulades can be made the same way from horse, beef, veal and elk meat.
