Wash the beetroots but do not peel them; set them over the heat in boiling, salted water; boil until tender, or boil for 5 minutes, then place them in a pan with a very little water and put into a hot oven. Cook until tender, about 2 hours.
Cut into slices when cold, and dress with vinegar, pepper, sugar and finely chopped parsley. Serve with salt herring and fried fish.
Boiled beetroots are cut into slices, left for 5 minutes in vinegar, peppered and fried in butter. Serve topped with fried onion as beetroot "biff".
