Blend the sifted flour with the cold butter, the cream and the egg. Knead everything together, and let the dough rest for 0.5 hour.
Roll out fairly thin, about the thickness of the back of a knife, and cut out with a cutter or a glass.
In the centre place a cold stew of fish, meat or vegetables. Brush around the edge with egg white, and fold the "cake" together into a half-moon or triangle.
Turn in egg and breadcrumbs and fry to a nice brown in lard or oil. Drain on a coarse cloth or flatbread. Serve piled in pyramids on a warm platter.
Rissoles and piroshki can also be made from: 100 g butter, 100 g wheat flour, 100 g boiled potatoes. Otherwise proceed as explained above.
