The rice is washed in cold water, scalded in 3 lots of boiling water, put over the heat in the boiling milk, and boiled down to a firm porridge.
The sugar, the vanilla and the blanched, finely chopped almonds are now added.
When the porridge is quite cold, it is shaped into round balls or like pears, rolled in half-whisked egg white and finely pounded rusk, and fried pale golden brown in lard.
NB. If you make them as pears, stick a whole clove in as the blossom and a small piece of whole cinnamon or a finely cut strip of candied peel as the stalk.
