Wash the rice, scald it, put it over the heat in cold water and bring to the boil; pour off the water and put the rice over the heat in the boiling milk.
When the rice is well cooked, stir in the sugar, the melted butter, the cream and the egg yolks.
Put onto a heatproof dish, spreading the porridge around the dish with a slightly raised rim, and in the centre fill with a compote of one kind of fruit or another, for example apples, level with the rim of the rice.
Cover the whole with meringue, made from 4 tablespoons sugar (icing sugar), 2 egg whites and 1/4 teaspoon vanilla.
Beat the egg whites stiff, add the sifted icing sugar one tablespoon at a time, then the vanilla.
Put the dish in a moderately hot oven; bake until the meringue is light yellow.
