Give the washed, scalded rice grains a quick boil, put them on the fire in the boiling milk, and boil until the grains are tender and dry.
If the mixture becomes too thick, a little more boiling milk can be added.
Stir in the egg yolks, sugar, butter and the whipped cream.
Place some of the rice as a round mound in the middle of a dish that can withstand the oven.
Arrange around it fresh, peeled and blanched pears, or preserved ones cut in two.
In the middle of the dish place sliced pears, and the rest of the rice pudding in layers.
Cover the whole thing with meringue.
