Original 1941 recipe

When the hen has been opened, remove the fat, soak it in water overnight, and cut it into smaller pieces.
Put it over the heat with a couple of dl of water and a teaspoon of salt.
You may first use fairly strong heat, skim, and let the fat continue to cook over lower heat until it is clear and the cracklings are light brown and crisp.
Strain through a straining cloth placed in a sieve. Cool it somewhat and put it in jars or bottles.
Cover with paper in which holes are pierced.
The fat is quite excellent both for baking and for frying meat and fish, etc.
