When the skimmed milk reaches the boiling point, take it off the heat at once and immediately stir in the soured milk.
The milk now separates, and the curd is lifted out with a slotted spoon or colander.
Press out the whey well, and stir salt and caraway or finely snipped chives into the curd.
If the mass is very firm, you can stir in 1 or 2 tablespoons of milk or cream; this fresh cheese is ready to use at once; it is cheap, and it is good.
The whey can be used for bread dough, for soup, or for jelly.
This curd is the one used in various dishes, but then it is of course not seasoned with the spices. You can also separate the milk using rennet.
