Cut the cleaned rhubarb into small pieces and put on the heat with the cold water.
When the stalks are cooked to a pulp, thicken the soup with the flour, which has been stirred into 2 dl cold water, bring to the boil, add sugar, and serve with small rusks.
The soup can be served cold with stiffly whipped cream.
2 egg yolks can be added to the soup; then whisk these stiff with the sugar, and pour the boiling soup in while whisking.
If the soup is made from bottled rhubarb on water, use 1 bottle of rhubarb to one l water, sugar to taste and about 25 g potato flour.
