Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Basic rule for cold puddings: the mould is rinsed in cold water, sheet gelatin (reckon 2 g per sheet) is cut up and dissolved in up to 1 dl water without boiling, cooled a little and whisked well into the mixture/cream. A method, not a single recipe. From Erken & Steen 1900.

Rinse the mould
Rinse the pudding mould in cold water before the mixture is put in – then the pudding comes out more easily later.
Dissolve the gelatin
Reckon that one sheet of gelatin weighs 2 grams. Cut the gelatin into small pieces and dissolve it in up to 1 dl of water without letting it boil.
Stir into the cream
Let the dissolved gelatin cool a little, and whisk it well into the mixture as you add it.
