Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Coffee fromage from Erken & Steen 1900: egg and sugar are whipped airy, mixed with strong clarified coffee, whipped cream and dissolved gelatine, then chilled. Alternatively can be frozen without gelatine.

En luftig kaffefromasj som kan settes med gelatin eller fryses som parfait. Fra «Kogebog for skole og hjem» (1900) av Henriette Schønberg Erken og Caroline Steen.
Boil the coffee
Boil the ground coffee with 125 ml (1¼ dl) water and clarify/strain it into a strong, clear coffee. Let it cool.
Whisk egg and sugar
Whisk the eggs and sugar for about ¼ hour into a pale, airy egg foam.
Add coffee and cream
Stir the cooled coffee into the egg foam, and fold in the whipped cream.
Set with gelatine
Dissolve the gelatine in 100 ml (1 dl) water and gently stir it in. Fill into a mould and chill to set.
Alternative: freeze
Instead of gelatine, the fromage can be frozen into an ice cream–like dessert.
