Into the boiled, warm, mashed potatoes are stirred the egg yolk, melted butter and salt to taste.
The potato dough is put into a bag sewn in the shape of a cone, to which is fitted a nozzle (tin piping tip).
Pipe it out of the bag onto a greased baking sheet, forming roses of the dough.
Brush quickly over with egg and bake in the oven a light golden brown.
Serve with various meat dishes, or set closely together on the serving dish, with some kind of meat fricassee filling the centre.
