After the potatoes are well washed, they are peeled and grated on a grater, or they are ground in a potato mill or meat grinder.
Into the grated potatoes stir barley or groat flour, and as much salt as you like.
If you have some mashed, boiled potatoes to put in, the dumplings become even finer and better.
If you have a little salted meat stock to mix into the water in which the dumplings are to cook, they get an even better flavour. If you cook the dumplings in plain water, add a little salt to the water.
Take a ladle and drop the dumplings into the water once it is boiling.
The dumplings get an even better flavour if you place a small piece of salted or fresh pork inside them, one by one, as you drop them into the pot.
You can also cook the grated potato dumplings in sweet, skimmed milk. The soup is then very good to eat alongside them.
For dipping the dumplings as you eat them, smoked-meat fat or melted butter is best.
If you have grated potato dumplings left over, you get a very good dish from them by cutting them into pieces, frying some pieces of pork in the pan, laying the dumplings in and heating them together with the pork.
