0.5 kg. of white or brown beans are boiled until tender, then ground in a meat grinder (or mashed with a pestle) together with two finely cut and browned onions, a bunch of finely chopped parsley, crushed or chopped thyme, a faint hint of cloves and likewise of nutmeg.
This is thinned with 2 to 3 dl. of cream, after which crushed hardtack (or rusks) is mixed into the whole to make a suitably thick forcemeat.
Dumplings are made and fried light brown in butter.
Served in a sauce of browned butter with flour stirred in, thinned with a little of the stock in which the beans were boiled and finished with sour cream or thick sweet cream.
In this sauce, boil for about 15 minutes a sprig of parsley, a sprig of thyme, a little bit of bay leaf and a whole onion, which are then removed.
The same forcemeat as described above is also used for bean pudding, only then a little looser — a little more cream in it. The forcemeat is then put in a greased dish and baked for an hour in the oven. Sauce as above.
