First boil until half done, then lift onto a colander so the water drains off well.
Butter and sugar are browned well in the pan, and the onions are turned in this until nicely browned on all sides. High heat.
Then add a couple of spoonfuls of boiling water or stock, and let the onions cook covered until tender; spoon the liquid over now and then.
Serve hot with browned butter over, with all sorts of fresh meat dishes, roasted and boiled.
