Hollow out 10 small, firm tomatoes.
Chop half an onion and sweat it in oil, add 0.125 kg. rice, stir it around, and pour over twice as much bouillon as there is rice. Cook until the rice is dry.
When the rice is cold, fill the tomatoes with it.
Set the tomatoes in a pan and pour over them 3 spoonfuls of oil, 3 spoonfuls of tomato purée and the juice of a lemon, then place a lid over them and set the pan in a not-too-hot oven for 0.5 hour.
The tomatoes must be basted often, and a little before they are done, take off the lid so that they can take on colour, after which they are arranged in a crystal bowl.
Into the sauce put a spoonful of meat glaze, reduce it, pour it over the tomatoes, and set a peeled olive on each tomato. This dish is served cold.
