The potatoes are put over the heat in the cold, salted water, boiled until tender, and the water poured off; the potatoes are peeled and rubbed through a sieve or purée press while still hot.
The eggs are beaten and stirred in little by little, pepper is added, and it is worked well together.
In an æbleskive pan the butter is lightly browned; a spoonful of the batter is placed in it, then a piece of boiled, cold ham or other meat, and covered with batter again.
When they are brown on the underside, they are turned. Lay them on a paper doily when they are done.
