The boiled potatoes are rubbed through a colander or purée press, and the melted butter, pepper and beaten egg are stirred in; salt to taste.
A small mould — not too tall — is greased; in it is placed a layer of the potato mixture, over this a layer of the finely sliced meat, which is covered with the potato mixture.
Drizzle over with about 1 teaspoon of melted butter, sprinkle with rusk crumbs, bake in the oven ¼ hour, or set over a spirit burner, and with a glowing, well-wiped knife run over the surface so the gratin becomes somewhat browned.
NB. Use for this leftovers of whatever is in the house of salted or fresh, boiled or roasted meat. It is a good little dish and gives an excellent opportunity to use up leftovers.
