Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

A mild, filling Norwegian potato soup (1900): potatoes, onion and celery sweated in butter and boiled tender in water, pushed through a sieve, mixed with milk and thickened with sago.

Potetsuppe er en mettende, mild hverdagssuppe der poteter, løk og selleri surres og kokes møre, moses og tykknes med sagogryn og melk. Fra Erken og Caroline Steens «Kogebog for skole og hjem» (1900).
Prepare the vegetables
Wash, peel and cut the potatoes into slices. Cut the onion and celery into slices as well.
Sweat and boil
Melt the butter and sweat the vegetables in it for 5 minutes. Add the boiling water, pepper and salt to taste, and boil until everything is tender.
Strain and add milk
Rub the soup through a colander and return it to the pot. Add the milk.
Cook the sago
When the soup boils, add the sago and cook until it is done. Stir now and then.
