Traditional Norwegian sweet rosehip soup (1900): rosehips boiled long in water and strained, thickened with a butter roux and sweetened with sugar. Served with browned white-bread cubes.

Nypesuppe er en tradisjonell, C-vitaminrik suppe kokt på ville nyper, jevnet lett med smørbolle. Retten hører til de søte suppene og er hentet fra Erken og Caroline Steens «Kogebog for skole og hjem» (1900).
Boil the rosehips
Boil the washed, cleaned rosehips in the water for 1.5 hours, and strain off the liquid.
Thicken the soup
Melt the butter, stir in the flour and thin with the strained rosehip liquid. Let the soup simmer for a quarter of an hour.
Season and serve
Season with sugar. Serve the soup with browned cubes of white bread.
