Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Potato border from 1900: 500 g mashed boiled potato warmed with 25 g butter, stirred with 1 egg yolk and 2 tbsp milk, rolled into a thick roll laid as a ring on the dish and patterned with the back of a fork.

Potetrand – en dekorativ ring av potetmasse som legges rundt på serveringsfatet og fylles med for eksempel kjøtt eller stuing – fra Erken og Caroline Steens «Kogebog for skole og hjem» (1900). Fremgangsmåten fortsetter øverst på side 188 i originalen.
Warm the potato mass
Rub the boiled potatoes through a sieve and put them in a pot together with the butter. Let it get thoroughly hot.
Stir in egg and milk
Add the egg yolk and the milk while stirring.
Shape the border
Put a little flour on the table, roll the potato mass into a thick roll, lay it around the serving dish and press a pattern into the edges with the back of a fork.
