Brussels sprouts from «Kogebog for skole og hjem» (1900): firm Brussels sprouts are cleaned, blanched with boiling water, boiled tender in salted water, drained and seasoned with butter and a pinch of pepper just before serving.

Rosenkål var en nyere og litt finere grønnsak i norsk kokekunst rundt 1900. Boken understreker at knoppene skal være faste, og at et raskt skåldevann før koking gir renere smak.
Clean the Brussels sprouts
Use firm sprouts – the firmer, the better. Cut the sprouts off the stalks, remove the outermost leaves, wash them and pour off the water.
Blanch
Pour boiling water over the sprouts and pour it off again immediately.
Boil until tender
Put the sprouts over the heat in boiling, salted water. Take them out when they are tender and let the water drain off.
Season
Just before serving, stir in a generous spoonful of butter and a pinch of pepper.
